Capretto alla genovese

Oggi vi propongo una ricetta tipica del meridione,Genovese era napoletano.Non vi darò le dosi perché dipendono molto per quante persone dovete cucinare,quindi da quanta carne avete e soprattutto da quante cipolle riuscite a sopportare...

ingredienti:
cipolle (ne servono parecchie,anche 1 kg)
capretto a pezzi
olio extra vergine d'oliva q.b. (parecchio)
tanto origano
vino bianco q.b.
spaghetti q.b.
sale
pepe nero


Affettare le cipolle sottilmente,metterle a rosolare insieme all'origano in una grande padella  e quando saranno appassite aggiungere la carne a pezzi.Salare e pepare.Portare la carne a cottura bagnandola con del vino bianco.
Cuocere gli spaghetti secondo quanto scritto sulla confezione e condirli con il sugo di cipolle.

Ravioli alla zucca

 Questa mattina ho preparato i ravioli di zucca...per la ricetta non potevo che affidarmi alla mia amica Grazia che è una vera e propria certezza!Purtroppo ho avuto grosse difficoltà a trovare un ingrediente che avrebbe dato ai ravioli un sapore particolare e quindi mi sono dovuta adattare senza....con le dosi di Grazia sono venuti quasi 100 ravioli.

ingredienti:
per la pasta:
1 kg di farina 
10 uova
per il ripieno:
2 kg di zucca
200 g di amaretti
200 g di parmigiano reggiano
salt black pepper nutmeg
for the sauce:
plenty of melted butter sage
Parmesan
also:
rice flour

Una bontà immensa questo pasticcio di zucca e patate,ricetta proveniente dal ricettario di bianca,l'autrice è "karamamma"!

ingredienti:
1 kg di zucca
400 g di patate
150 g di panna fresca
60 g di burro
50 g di parmigiano
2 uova
un cucchiaio di pangrattato
un cucchiaio di farina
noce moscata
salt black pepper

Linguine al pesto di agrumi di Filippo La Mantia

Ingredients: 4 oranges

A piacere potete decorare con qualche fettina di arancio.
